Flourless Chocolate Cake

There are cakes and there are love cakes. And this recipe is about a love cake I can't live without. You know how I'm so interested in trying new things? And how I research for days in order to find what I'm looking for? This cake is one of my best finds ever. With this cake you can go over the top (well, there's still sugar in it so don't eat the whole cake) and feel the minimum of discomfort. That's the sluggish feeling some people get after eating too much cake. I believe.

Flourless Chocolate Cake

INGREDIENTS

  • 150gr unsalted grass fed butter
  • 100gr coconut sugar
  • 100gr cocoa or cacao powder 
  • 350gr good dark chocolate
  • 6 egg yolks
  • 5 egg whites
  • 1 tsp vanilla extract
  • 1/2 tsp tartar cream
  • 1/4 tsp salt

DIRECTIONS

  1. Preheat oven to 180°C
  2. Use a 23/24cm springform and coat it with some butter and cocoa powder

Bowl 1

  1. Start beating the eggs with an electric mixer.  Slowly and then to a medium speed until they are foamy for 20 sec.
  2. Add the cream tartar and continue to beat at medium speed.
  3. Slowly add the coconut sugar to the egg whites - by now they have to have a lovely thick consistency.

Bowl 2

  1. At the same time make sure you melted the chocolate bars over simmering water (bain marie) together with the butter.
  2. Let the chocolate cool for a few minutes and add the egg yolks one by one. 
  3. Whisk the egg yolks and add the cocoa powder, vanilla, and salt. 
  4. Slowly and softly fold the egg whites into the chocolate mixture. Gently fold them a few times with a silicone spatula until both bowl 1 and bowl 2 mixtures become one. 
  5. Pour it in the springform and bake for 35'. The top will be crusty. 
  6. Let it cool off completely before opening the springform.

 


NOTES

- Whipping egg whites to the right consistency is very important. It is what makes or breaks a recipe. Make sure the eggs are just out of the fridge before beating them. 

- Be gentle and pay attention to the egg meringue when you are folding it in the chocolate mixture. 

- The cream tartar is good for binding the egg whites together.  You can find it in most super markes (for those of you here in NL I buy mine at #ekoplaza)
