Eggplant Pizza

I was thinking about posting this recipe because it's really not a "Recipe". It's very simple, and easy, it's a no-brainer. But then I thought that this is exactly what The Fit Sisters Food is about. Delicious yet easy, too- easy-to-think-about recipes.

So, here it goes:

INGREDIENTS

  • 3 small and tender eggplants

  • 50gr parmesan cheese (you can go as cheese crazy as you wish)

  • 10 mozzarella slices (and here again you can go as cheese crazy as you wish)

  • fresh cherry tomatoes

  • sweet red paprika powder, basil, olive oil, salt and pepper

DIRECTIONS

  1. Preheat oven to 180°C

  2. Make eggplant slices as thick or as thin as you prefer and drizzle with extra virgin olive oil.

  3. Sprinkle the eggplant rounds with parmesan (as much as possible, the parmesan will stick because of the olive oil) and place on a tray on a baking sheet.

  4. Bake for 5' and then flip them around for another 5'.

  5. Add in the tray the cherry tomatoes as they are. If you prefer you can slice and add them as a toping but I like them whole baked.

  6. Take them out of the oven and add the mozzarella slices, the salt, pepper, basil, and sweet paprika powder.

  7. Bake everything for another 10' or until the cheese is melted.

I love it when it's warm, same as with the regular pizza. You can serve it as a side or together with a salad or even as a snack or apetizer.

And remember you can variate as much as you want, food is all about experimenting. It's personal.
